Saturday -- May 11, 2013 - Weiss Spargel Season

Many years ago, my father worked for a German company and frequently traveled to Germany.  During one of his many trips, he had white asparagus or "Weiss Spargel" and has not eaten a green one since.  Even to this day, my father says "I don't eat green asparagus, only white ones."  He claimed there was nothing like white asparagus or "Weiss Spargel." The problem of course is that you can only get "real" Weiss Spargel in Germany.  Weiss Spargel season begins just after Easter and goes until June 24th. It is a big deal here.  Everywhere you turn you see Weiss Spargel stands and Weiss Spargel specials on the menus.  Some towns even have festivals.  I have been told that the best Weiss Spargel are the thick ones because you have to peel the base down quite a bit before you steam them (otherwise they are too woody).  We have had them several times.  I have even purchased a special spargel peeler.  Unlike the green asparagus, you have to steam them for quite a long time.   While we have not eaten them this way, they are often served with hollandaise sauce.  So dad, everytime we have Weiss Spargel, we think of you!
